Cabbage Soup Recipes
Original Cabbage Soup Recipe
- Half a head of cabbage
- 6 green onions
- 1 bunch of celery
- 2 green peppers
- 3 carrots
- 1 container of mushrooms
- 1 or 2 cans of tomatoes
- 1 package of Lipton Onion soup mix
- 1 48oz. can of V8 juice (optional)
- 1 or 2 cubes of bouillon (optional)
- Season to taste with salt, pepper, garlic powder, parsley, or any seasoning that is preferred
- If you like a spicy soup, you may add a small amount of curry or cayenne pepper
Weight Watchers Cabbage Soup Recipe
- 1 large dark green cabbage
- 1 head of celery
- 2 carrots
- 1 red, green and yellow pepper
- 3 big leeks
- 2 lbs of mushrooms
- 3 onions
- Small bag of spinach
- Big bag of rocket leaves
- Big bag of watercress
- 1 can Weight Watchers chicken soup
Directions apply to either recipe:
Slice onions, saute in large pot with cooking spray.
Dice celery and peppers, add to pot.
Slice carrots into bite size pieces and add to pot.
Remove the outer leaves from the cabbage, cut into bite size pieces, add to pot.
Slice mushrooms into thick slices and add to pot.
Use beef or chicken bouillon cubes (optional) for seasoning.
Add V8 juice (optional) and enough water to cover vegetables.
Cover and cook over low heat 15 to 20 minutes (until vegetables are soft)
Season to taste with salt and pepper.
